How to Make Mini Sourdough Popover Loaves + Sandwiches For Your Next Bike Ride
I believe ya’ll are really going to enjoy this recipe. What we have here are Mini Sourdough Popover Loaves and Sandwiches. The idea came from a five-ingredient sourdough popover recipe I baked using muffin tins. They made a really nice, chewy type of bread that you could enjoy with different jams, nut butters and other spreads. Although the thing with the muffin tin popovers was that they're just a little bit too big when it came to being able to pack them easily for bike rides.
I needed something smaller and more compact that would fit into my back jersey pocket or feed bag. So what I did is used that same recipe but used a mini loaf bread tin instead. I made up the batter and poured it into the mini loaf tin. (This was an experiment so I had my fingers crossed throughout the baking process) After waiting a short while for them in the oven, BOOM!, they popped over and made these fantastic mini sourdough popover loaves. VICTORY!
From there I cut the loaves into mini slices and created different types of mini sandwiches that I could pack for my bike rides and events.
These are a TON of fun and fairly easy to make. I want to share this entire process with you so you can make your own mini bread loaves and sandwiches. So I put together a how-to guide below to help you create these little mini loaves along with some ideas to create a variety of sandwiches you can use to take on your next bike ride.

1. Bake The Sourdough Popover Loaves
To make the Sourdough Popover Mini Loaves, follow this recipe for these 5 Ingredient Sourdough Pop-OH-Vers.
A few changes to the recipe above:
Use a mini loave pan like this one from Wilton instead of a muffin tin. This will give you the perfect mini bread loaf you are looking for!
Add in a Tbsp of honey if you’d like!
If you don’t have a sourdough starter there are a few things you can do:
Buy your own starter online from a website like King Arthur.
Go to your local bakery and ask if you can have a small sample of their sourdough starter (I scored my sourdough starter from Little Red Hen Bakery in Salida)
Use this similar popover recipe instead (You just won’t get the sourdough tang with this recipe)

2. Slice Your Sourdough Loaf Into Mini Slices
Once your loaves are baked and cooled, use a bread knife to slice your sourdough loaves into mini bread slices. From here you can go right to step 3 to create your sandwiches. If you’d like, freeze half of the slices and take them out when you’re ready to move on to step 3.
3. create your Mini Sourdough Sandwiches and Pack Them For Your Next Ride
The world is your oyster from here. Use nut butters, jams, hummus, cheeses, avocado and more to compile your mini sandwiches.
Here a few recipe ideas/combos you can use to help create your sandwiches.
Hummus with mozzarella cheese
Smashed avocado with a sprinkle of sea salt and cayenne pepper
Once your sandwiches are made, wrap in Bee’s Wrap, store them in a Stasher, or individually wrap in tin foil and take them along with you on your next big ride.
These mini sandwiches were part of my race day fuel plan for the Firecracker 50 Race and they worked out wonderfully! There is nothing more satisfying than a chewy piece of bread with your favorite spread during a long, hard effort.
