3 Ingredient Flatbreads For The Carb Lovin’ Cyclist

As carb lovin’ cyclists, there’s nothing more comforting than bread. There’s also nothing more comforting on the mind when your bread takes only 3 ingredients and less than 30 minutes to make.

These 3 ingredient flatbreads, along with your preference on optional seasonings/herbs, are the perfect complement to a bowl of rice, falafel, hummus, eggs and much more!

So for all you bread connoisseur’s who’d like to treat themselves after a day of riding, this one’s for YOU!

Ingredients

  • 1 -1/4 cups Gluten-Free 1-to-1 Baking Flour

  • 1-1/2 tsp baking powder

  • 1/2 cup yogurt

  • 1/2 tsp salt (optional, but recommended)

  • 1/2 tsp fennel, oregano, parsley or other herbs/seasonings (optional)

  • 1/4 cup chopped fresh parsley or cilantro (optional)

Tip: I used fresh, chopped Italian parsley when I made these flatbreads. You can use your preferred seasonings and/or fresh herbs in this recipe. Or keep it simple and use none!

Directions

Add dry ingredients to a large mixing bowl and mix to combine. Add yogurt to the dry ingredients and mix well with your hands until a slightly sticky dough forms. Cover and allow the dough to rest for 15 minutes.

Flour a cutting board and the dough with a little extra flour. Knead the dough a few times until smooth (add small amounts of flour if still sticking to the surface).

Cut the dough into 4 even pieces with a knife and then roll each ball out with a rolling pin. (I didn’t have a rolling pin so I just used my hands to flatten and roll out!)

Place one piece at a time on a greased skillet and cook for 2-3 minutes on both sides until golden.

Enjoy with rice, falafel, hummus, eggs, and much more!
