Midnight Minute Mug Chocolate Recovery Cake
I know the way to my wife Haley’s heart is through sweets. So a chocolate cake is right up her alley when it comes to winning her over. I also knew she needed to recover from a 13-mile uphill bike race she did midweek in the midst of getting ready to do a 15-mile trail run race in Leadville a few days later. This is her first and by far the longest trail race that she’s ever done. So I worked my magic to pull together this chocolate recovery minute mug cake together in 5 minutes. Made with almond flour, natural sweeteners, Skratch protein powder and plenty of love.
As soon as she got home at night, I had the batter prepared in a mug ready to be popped in the microwave and ready to eat in 90 seconds. Science shows eating protein before bed can also help aid in recovery. While you sleep, protein is effectively digested and absorbed, which can increase muscle protein synthesis up to 22% and improve whole-body protein balance during post-exercise overnight recovery. YES! That just goes to show there is nothing wrong with a little cake before bed as long as it has the right ingredients ;)
So I’m sure you may have heard of the old relationship adage never go to bed angry. Well I’m switching that saying up slightly to be, “Never go to bed hangry.” Because how on earth can you be angry when eating this Chocolate Recovery Mug Cake before bed?

Ingredients
1 tsp coconut oil melted
1/4 cup almond flour
1 egg
1 Tbsp applesauce
2 Tbsp Bjorn’s Vanilla Bean Honey (sub 2 Tbsp honey and 1 tsp vanilla)
1 tsp cocoa powder
1 tsp almond butter
1/4 tsp baking powder
Sea salt to taste
Optional toppings: Fresh fruit, yogurt, dried coconut, nuts or a dollop of vanilla ice cream if having for dessert!

Directions
Melt coconut oil in a mug for 20 seconds. Add in almond flour, egg, baking powder, salt, vanilla bean honey, and applesauce. Stir to combine. Add in protein powder and cocoa powder and mix until smooth. Microwave on high for 90 seconds. Top with additional toppings of your choice and enjoy!
