Power Your Morning Rides With This Chocolate Mocha Muesli

This Chocolate Mocha Bircher Muesli is a “bittersweet” way to kickstart your day. Made with nutritious and wholesome ingredients, it serves as a perfect warm or cold breakfast before a ride, helping you stay energized all morning long.

Cacao powder and espresso add a bitter first bite while the maple syrup, Medjool Dates, and banana give it a sweet finish. A small amount of Greek yogurt and peanut butter add in additional protein to keep you full, yet light on your feet.

Top your muesli off with homemade Chocolate Maple Sea Salt Granola and cacao nibs for added crunch. Ride on!

Serves 1

5 minutes to prep, 1½ minutes to cook, or 20 minutes to overnight for soaking


Ingredients

½ cup rolled oats or Classic DIY Muesli

½ cup unsweetened soy milk (substitute milk of choice)

1-oz brewed espresso (substitute brewed coffee)

1 Tbsp maple syrup

2 Tbsp Greek yogurt

1 Tbsp chia seeds

1 Tbsp cacao or cocoa powder

½ banana sliced

½ Tbsp peanut butter (optional)

2 pitted and chopped Medjool dates

Directions

Add muesli, milk, espresso, maple syrup, Greek yogurt, chia seeds, and cacao powder to a cereal bowl. Stir well to fully incorporate the cocoa, then add the sliced banana.

To serve room temperature/cold: Let soak at room temperature for 20 minutes or cover overnight in the fridge.

To serve warm: Microwave for 1½ minutes.

Serve with peanut butter, chopped dates, Chocolate Maple Sea Salt Granola, and cacao nibs.
