15-Minute Cycling Snack: Baked Strawberries & Cream Bread Roll-Ups
Pair the classic combo of fresh Summer strawberries and cream together in these Strawberries & Cream Bread Roll-Ups. A quick 15-minute snack you can use to fuel with before, during, or after a ride.
These simple snacks are made with white bread, fresh strawberries, and soft cream cheese or marscapone cheese - all rolled up and baked to golden perfection.
Don’t have time for baking? Just skip that step and go right to the rolling!
Ingredients
4 slices of soft white bread (I love Dave’s Killer White Bread)
1-2 Tbsp of strawberry jam per slice of bread
1 Tbsp mascarpone or soft cream cheese per slice of bread
Finely diced fresh strawberries (optional)
Melted butter or coconut oil for brushing on top
Directions
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Cut the crust off the bread slices. Roll the bread flat with a rolling pin or glass. Spread jam and cheese evenly over each slice of bread, leaving about a half-inch strip clean on one end for the seal. Add a small amount of diced strawberry, if using.
Starting with the end that has the jam and cheese, tightly roll up the piece of bread toward the clean end. Pinch the bread together to form the seal. Place bread roll-ups on the baking sheet and brush with melted butter or coconut oil.
Bake for 10-15 minutes or until lightly browned on top. Take out of the oven, eat immediately, or let cool and individually wrap with Skratch Paper or Slick Wrap and take with you during a ride.
