Bike-Sized Sweet Potato Peanut Butter And Banana Slice Cakes

Mini sweet potato peanut butter and banana slice snack-cakes. Nuff said!

Here’s how to get your Friday Biked Goods breakfast and snack game on.

Dry ingredients

  • 1 cup all-purpose gluten green flour

  • 1-1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1 Tbsp coconut sugar

Wet ingredients

  • 1 cup cooked sweet potato

  • 1 egg lightly beaten

  • 3/4-1 cup almond milk

  • 1 - 2 Tbsp peanut butter

  • Chocolate chips (optional)

  • 4 bananas sliced into 1/4 inch pieces

Directions

Add dry ingredients to a bowl and stir to combine. In a separate bowl stir or add wet ingredients to the blender to combine into a smooth batter.

Add wet ingredients to dry ingredients and stir until well mixed. Fold in chocolate chips if using

Cut the banana into slices and add it to the batter mixture. Carefully stir to coat slices evenly.

Bring a lightly oiled sauté pan to medium heat and add in banana slices. Let cook until each side is golden brown.

Top with maple syrup, fresh fruit and/or yogurt. Refrigerate or freeze leftovers for an easy, bite-sized snack while you’re out on the road or trails!

* Makes about 32 mini pancakes.
