Five Minute Breakfast: Peachy Molasses Quinoa Bowl

Our lives are busy. We move fast. Juggling multiple priorities is often the norm.
This can cause us to reach for the easiest, most convenient breakfast foods. Sometimes these may not be the healthiest food choices either.
Good and nourishing food does not have to be time-intensive or intimidating. A little prep work can go a long way and take our bodies along for the ride vs feeling two steps behind.
That’s what you’ll get with this Peaches and Molasses Quinoa Bowl. Served with sliced almonds, pepitas, shredded coconut and dried tart cherries.
This quick breakfast (or recovery meal) is made for the modern-day warrior. Beware of its nourishing powers. Side effects include long days on the saddle fighting steep pitch climbs and grueling headwinds. Just be sure to consume 2-3 hours before battle for optimal results.
Ingredients
2/3 cup cooked quinoa
1/2 cup almond milk or another plant-based mile
1 peach, cut into slices
Nuts - I used pepitas and sliced almonds
Tart dried cherries
Shredded coconut
Sprinkle of cinnamon
Drizzle of molasses, honey or maple syrup
You can optionally toast the nuts and shredded coconut for five minutes in a frying pan. This will give you a slightly more nutty and aromatic flavor to your breakfast bowl!
Directions
Prep your quinoa when you find 15-20 minutes during the week. Double the batch for leftovers to make this breakfast in 5 minutes or less.
Combine cooked quinoa, almond milk, and your choice of mix-ins. Microwave until warm. Drizzle with molasses, maple syrup or honey and sprinkle with cinnamon.
Switch out fruits, nuts and toppings for an entire weeklong of satisfying breakfasts that will help your body keep up with the daily demands of life.
Optional fruit and topping ideas:
Apple, cinnamon, almond slices and honey
Blueberries, walnuts and maple syrup
Blackberries, pistachios, shredded coconut and maple syrup
Strawberry, balsamic vinegar, and maple syrup and/or coconut sugar
Don’t forget to smell, taste, and enjoy each bite along the way! It only takes a few mindful seconds out of your day.
