Blackberry + Pistachio Coconut Milk Muesli

Swap out the stove for the fridge in this easy-to-make Blackberry + Pistsaschiop Coconut Milk Muesli.

Made with muesli, coconut milk, blackberries, pistachio, and refreshing mint, this is a great pre-ride breakfast 3-4 hours before a ride. You can also snack on this as a post-ride recovery snack or meal.

Serves 1

Time 5 minutes to prep, 20 minutes to overnight for soaking


Ingredients

½ cup muesli or sprouted rolled oats

½ cup coconut milk (use canned liquid or bottled)

2 Tbsp coconut cream, from a can (substitute Greek yogurt)

½ cup fresh blackberries

2 Tbsp crushed pistachios

2 Tbsp unsweetened coconut flakes

1 Tbsp mint, finely chopped

1 Tbsp maple syrup or honey

 

Directions

Add muesli or rolled oats, coconut milk, and coconut cream to a cereal bowl. Stir, cover, and let rest at room temperature for 20 minutes or refrigerate overnight.

When ready to eat, top with crushed pistachio, coconut flakes, mint, and maple syrup or honey.

Baker’s Tip

There are a few ways you can use coconut milk in this recipe:

  1. Use the liquid from a can of coconut milk + scoop 2 Tbsp of coconut cream from the top of the can.

  2. Storebought bottled coconut milk + 2 Tbsp of coconut cream from the top of a can.

Use leftover coconut milk in smoothies, overnight oats, or baked goods.
