Apple-Saucy Pancake Muffin Minis
Feel like getting saucy on your next ride? Whether you want to impress someone with your skills or bike snack baking abilities, these Apple-Saucy Pancake Muffin Minis will help give you an edge. They’re sweet, cinna-spicy, and super portable. My new best friend is going to be this mini muffin baking pan I just picked up. It’s perfect for baking bite-sized bike snacks like muffins, bars, and cookies. This makes it easy to stash (stash yours here) and pack these muffins on your next ride.
Let’s get out there and rip it!
Ingredients
2 Tbsp coconut sugar ( My favorite brand is Madhava )
2 tsp baking powder
1 tsp cinnamon
1 large egg
1 cup unsweetened applesauce
1/2 tsp salt
1 tsp vanilla extract
1 Tbsp vanilla honey (I used this as a sub for the vanilla extract. Feel free to just add the honey if you don’t have vanilla honey!)
Instructions
In a bowl, combine all dry ingredients: flour, coconut sugar, baking powder, salt and cinnamon. Whisk together.
Add egg, applesauce, honey and vanilla to the dry ingredients. Stir until just combined. If your batter looks too thick to pour (this will depend on your brand of applesauce), add 1-3 tablespoons of water and stir to incorporate.
Let the finished batter sit for 5 minutes. During this time lightly grease a mini muffin tin and preheat the oven to 350 F.
Fill each muffin cup just shy of the brim. Bake for 15-20 minutes or until muffins turn slightly brown
Serve muffin minis with your favorite jam, nuts butter, or fresh fruit. Store muffins in the fridge in an airtight container for the freshest results.
