Apple French Toast Cakes

A Fall-inspired portable snack made with warming flavors from maple syrup, vanilla, cinnamon, and apples.

You can eat these Apple French Toast Cakes warmed up with a little nut butter as an early morning snack before a ride or pack them with you and eat on the go!

Makes 12 cakes

Time 5 minutes to prep, 25-30 minutes to bake


Ingredients

1½ cups unsweetened almond milk, heated 

4 cups cubed white bread, tightly packed (I love Dave’s Killer White Bread)

3 eggs 

2 Tbsp maple syrup '

1 Tbsp coconut sugar, plus more for sprinkling

1 tsp vanilla extract

1 tsp ground cinnamon, plus more for sprinkling

4 cups cubed white bread, tightly packed

1 crisp apple, chopped

 

Directions

Preheat the oven to 350 F. Line or lightly grease an 8-inch square pan, 12-tin bar pan, or 12-tin muffin pan. Set aside.

Add cut and cubed bread to a large mixing bowl. Heat almond milk in the microwave on high for 90 seconds in a large measuring cup. Add eggs, maple syrup, sugar, vanilla extract, and cinnamon. Beat until eggs become light. 

Add milk and egg mixture to the bread bowl and stir to coat the bread pieces fully. Fold in the chopped apples and raisins, if using. Let rest for 5 minutes

Spoon batter into your prepared pan. Sprinkle with a generous amount of coconut sugar and cinnamon on top of the cakes. Bake for 20-30 minutes, or until a toothpick inserted comes out clean. Let cool.

Cut and individually wrap cakes and store them and refrigerate or freeze them until your next ride. You can also reheat them slightly in the microwave before a ride for a warm snack.
