Lazy Sunday Morning Muesli Toasting Bread
The name is implied when it comes to this Muesli Toasting Bread. Make this Biked Good for a comforting treat to indulge on a lazy Sunday morning with a cup of joe. After a hard weekend of riding, you deserve a few slices of this bread during your rest day.
It’s made with simple ingredients including pumpkin seeds, almonds and dates. Perfect for sandwiches, french toast, or toasted with jam, nut butter and/or honey for breakfast.
A little labor of love goes into making this bread, but the reward is 100% worth it. Plus, you’ll have the time, right? Because that’s what lazy Sundays are for.

Ingredients
1 1/2 cups warm water
1/4 cup brown rice flour
1/2 Tbsp salt
3/4 Tbsp fast-acting yeast (1 pack yields ~3/4 Tbsp)
1/4 cup chopped dates (I get mine from Rancho Meladuco Date Farm)
1/4 cup raw pumpkin seeds
1/4 cup raw almonds
Directions
Combine warm water, yeast, salt and flours in a large mixing bowl and stir until well combined. The result will be a sticky, rough dough. Carefully lift the dough out and lightly grease the bowl with nonstick spray or olive oil. Cover and let rise in the refrigerator for two hours.
Once risen, lightly sprinkle the dough with flour and transfer to a floured work surface. Knead a few times, then add in pumpkin seeds, almonds and chopped dates (If your dates are dry, soak them in warm water for 10-20 minutes and pat dry before adding to the dough). Knead lightly until combined.
Place on a parchment-lined baking stone or lightly greased baking sheet. Sprinkle a light coating of flour over the top to help keep the dough moist. Let rest for 45-60 minutes.
Preheat the oven to 450°F while the dough rests. Place a metal or cast iron pan on the lowest oven rack, and have 1 cup of hot water ready. When ready to bake, slash the bread 3 times with a knife, making a cut 1/2-inch deep on the top surface. Place loaf in the oven and carefully pour hot water into the shallow pan on the rack beneath. This adds moisture to the baking environment.
Bake the bread for 25 to 35 minutes, or until deep, golden brown. Remove the bread from the oven and cool on a rack. Don’t forget to give your bread a BIG sniff as it comes out of the oven!) Store leftovers in a plastic bag at room temperature
