Savory Kale + Pesto Oatmeal
If you need to switch up from a sweet breakfast, give this savory oatmeal a try. Can also be enjoyed as a hot lunch or dinner ;)
Ingredients
1/3 cup rolled oats
1/3 cup veggie broth
1 tsp chia seeds
1 tsp flax seed
1 tsp hemp seed
1 over easy egg
1 small handful of kale
8 -10 small slices of tomato
1tbsp of pesto
Directions:
In a medium-sized skillet add oil, kale and tomatoes.
Sauté for 2-3 minutes on medium heat. In the meantime, add rolled oats, chicken broth, hemp seed, flax seed, hemp seed, and pesto to a microwaveable bowl and stir evenly.
Add 1 egg to skillet and cook for 2-3 minutes.
Place oatmeal into the microwave on high for 1-2 minutes.
Once done, place sautéed veggies and egg on top of oatmeal and add more pesto on top if desired.
Serve with a side of mixed berry or peach ginger jam sourdough toast for a sweet and savory combo.
