Cashew Butter, Strawberry Jam and Hazlenut DREAM Recovery Breakfast Quesadilla
When I say easy, I mean easy. And when I say delicious, I mean MORE than delicious. There’s nothing more you want than an easy and “more” than delicious recovery breakfast after a ride. That’s what you get with this gooey, sweet and satisfying breakfast quesadilla.
After starting a new job, my M.O. has been easy, yet satisfying meals. I now wake up around 5:30 in the morning to get my training rides in. This means I need a quick meal that will help me recover while transitioning over to work mode once my ride is done.
Made with homemade cashew butter, strawberry jam and chocolatey hazelnut spread folded together in a dreamy, white tortilla. This is the DREAM breakfast you’ve been waiting for. Hop on your bike and get your hands on one soon by making this simple meal.
Ingredients
Spiced Cashew Butter
Strawberry Cardamom Chia Jam
Chocolate Hazelnut Spread
Half a banana, sliced into thin pieces
A spread of your favorite yogurt
Hemp seed for sprinkling and topping
One 8 inch white tortilla. I get mine from Stacy’s Organic Unbleached Tortillas
Fresh fruit, seeds, yogurt and/or nuts for topping
Directions
If you haven’t yet, make your nut butter, jam, and hazelnut spread using the recipes here. (Or just use store-bought) Heat a little coconut oil in a medium-sized skillet on medium heat. Make one slit to the middle of your tortilla with a scissors or knife. Add cashew butter, jam, hazelnut spread, and yogurt with banana slices and hemp seed to a quarter of the quesadilla. Wrap one end over the other until you’ve formed the ultimate quesadilla sandwich. I’m sure you’ve seen this hack before. If not watch this video here.
Tip: I understand making all the nut butter and spreads at once may not work for you, so try starting with one. Or make them a day or two ahead of time. They’re pretty darn easy! And then use storebought items for whatever you don’t make on your own.
Fry on each side for 2-3 minutes or until the quesadilla begins to brown. When done, cut in half and open your world to a gooey, sweet, and delicious breakfast. Add more toppings like strawberry slices, banana slices, yogurt, and/or hemp seeds to your desired liking.
