Muesli Berry Dessert Cups
A fun snack or dessert that takes minimal work, yet looks like a decadent treat. Make a batch of these Muesli Berry Cups for the week, fill, and top them when you're ready to eat or serve them all up for a celebration or get-together.
Makes 12 muesli cups | Time 20 minutes
Ingredients
Muesli Cup Crust
2-1/2 cups muesli, any kind (pg. X)
3/4 cup peanut butter or almond butter
6 Tbsp maple syrup
Fillings and Topping Options
1 - 2 Tbsp Greek Yogurt or other yogurt
Mixed berries (blueberries, raspberries, blackberries, sliced strawberries)
Cacao nibs
Unsweetened shredded coconut or flakes
Date syrup, for drizzling
Granola, for topping
Mint leaves, for garnish
Directions
Preheat the oven to 350 F. Line a 12-cup muffin pan with baking cups.
Pour 1-1/2 cups of muesli into a food processor or high-speed blender. Process for 30-60 seconds or until muesli is pulverized into fine flour.
Pour muesli flour into a large mixing bowl along with the remaining muesli and other dry ingredients. Add peanut or almond butter and maple syrup to the muesli bowl. Stir to combine
Spoon muesli batter into the prepared muffin cups. Use your thumb, a spice shaker, or a shot glass to press down the middle of the batter to form a cup shape.
Bake for 10-12 minutes, or until lightly brown on the edges. Leave in the tray to cool and harden.
When ready to eat, top with a choice of fillings and toppings. Keep unfilled Muesli Cups in an airtight container at room temperature or in the freezer.
