Mini-Baby Spiced Donuts

The family was in town for the week and making donuts never fail. Because nothing brings people together like fresh donuts with a morning cup of joe around the table.

The best thing about these donuts? They’re made with real, simple ingredients, healthy fats and no refined sugars. So you never have to feel guilty about having one or five (your baby included).

Enjoy these as a comforting breakfast treat or pack them as an on-the-go bike snack. Heck, eat them HOW and WHENEVER you want, just make sure to share them with your little ones and family, too.

Ingredients

For the donuts

  • 1/2 cup all-purpose flour or millet flour (both work!)

  • 1/2 cup brown rice flour

  • 4 Tbsp almond flour

  • 1/2 cup coconut sugar

  • 1 cup applesauce

  • 2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp allspice

  • 1/4 tsp cardamom

  • 1/8 tsp ground cloves

  • 1/8 cup coconut oil melted

  • 1 Tbsp chia seeds + 3 Tbsp water

  • 1/2 tsp salt

  • 1 tsp vanilla extract

For the coating

  • 2 Tbsp coconut oil melted

  • 3 Tbsp coconut sugar

  • 1-1/2 Tbsp cinnamon

Directions

Preheat oven to 350 F. Spray a mini muffin tin (Like this one from ) with nonstick spray. Set aside. In a medium-sized bowl combine flours, spices, baking powder, coconut sugar and salt. Whisk together and set aside. In a small bowl, add chia seeds and water. Stir and let sit for 5 minutes to form a chia egg.

In the dry ingredient bowl, add coconut oil, vanilla extract, applesauce and chia egg. Stir until well combined. Fill mini muffin tin with the donut batter. Bake for 15 minutes and let cool for 2-3 minutes.

Melt coconut oil for coating in a bowl. In a separate bowl combine coconut sugar and cinnamon. Dip each donut into the coconut oil and then roll in the sugar and cinnamon mixture.

These mini donuts taste great right out of the oven when they are still a little warm. Eat immediately or store in an airtight container at room temp for 2-3 days. They also make for a comforting morning snack out on a bike ride.
