Coconut Cherry Plum Compote Toast
This toast with cherry and plum compote makes for a quick and easy sweet breakfast bite! Spread your toast with goat cheese, yogurt or cream cheese and top with vanilla honey, dried fruit, fresh thyme and/or your favorite nuts.
Whether you want to eat this for a small pre-ride meal or recovery meal, the choice is yours. (I prefer the latter) For pre-ride, you should probably stick with the white bread and yogurt option. If eating after a hard ride, go wild with different bread options and use a small amount of cheese to complement the jam.
I use Bjorn’s vanilla bean honey to add the final touch to this simple, yet satisfying toast combo.

Coconut Cherry Plum Compote with Toast
Ingredients
- 15 pitted cherries pitted
- 4 large plums pitted (or 6 medium plums)
- 1 tsp coconut oil
- 1 Tbsp tapioca/arrowroot/cornstarch
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 2 spoonfuls of goat cheese, cream cheese or Greek yogurt
- Vanilla honey for drizzling on top
- 2 slices of your favorite bread toasted
- Topping ideas: Dried coconut shreds, pecans, almonds, fresh thyme, cocoa nibs
Instructions
- Wash and pit the cherries/plums and then add them to a medium saucepan with the maple syrup, coconut oil, vanilla, and tapioca/arrowroot/cornstarch. Bring to a boil. Reduce the heat to low and simmer for about 10 -15 minutes stirring frequently until the cherries and plums become soft and reduce.
- Toast the bread and then spread the cream cheese, goat cheese or yogurt over the slices.
- Spoon some sautéed compote over top and then garnish with a drizzle of vanilla honey, dried coconut shreds, fresh thyme and/or nuts!
- Eat immediately!
- Keep leftover compote stored in an airtight container in the fridge.
