2nd Annual Team Summit MTB Program Cookie Fundraiser

Community Supporting Youth and Youth Supporting Youth with COOKIES!

Biked Goods and the Team Summit Youth MTB Team teamed up for the 2nd year to share with the local Summit County community some of THE BEST cookies EVER!

Team Summit athletes volunteered their time to make over 250 cookies for:

  • The Frisco Funduro Event - each youth registrant received a cookie during packet pickup

  • A large cookie order for Vail Summit Orthopedics

  • All of their teammates for the start of Summer programming next week!

A HUGE shoutout to Cool River Coffee House in Breckenridge for letting us use their space to pull this fundraiser off!

Another shoutout to everyone who bought cookies to support the Team Summit Mountain Bike Program. Cookie supporters had the option to choose from 3 flavors of cookies, including Team Summit Top Secret Chocolate Chip, Fresh Blueberry Lemon Sugar Cookies, and Gnarly Granola Cookie Bars.

In the end, we raised $800 for the Team Summit MTB program, just short of our $1,000 fundraising goal. Even though I would have loved to hit our goal, what’s more important is that our community came together to support getting more kids on bikes AND the Team Summit Youth athletes came together to support their community through service and giving back to something greater than themselves.

I’m super proud of the athletes for coming to ME and saying what they would like the proceeds from this fundraiser to go towards and following through with their ask.



Money raised from the cookie fundraiser will go towards a Team Summit Family, a Biked Goods baking class + adventure ride, and the Jamison Lee Family.

At Biked Goods, we’ve always believed in the power of the bicycle and food to bring people together and create stronger communities. I can’t thank everyone enough for standing behind this initiative and investing in the future of our youth.

Team Summit Top Secret Chocolate Chip Cookie Recipe

Bake these cookies for your next class, bake sale, bike ride, fundraiser, or event.

Ingredients

3/4 cup coconut sugar

1/2 tsp vanilla extract

1 Tbsp flaxseed

3 Tbsp unsweetened almond milk

1/3 cup melted and cooled coconut oil

2 cups Pamela's Gluten-Free Pancake and Baking Mix (MUST use this exact product)

1/2 tsp baking soda

1/4 tsp sea salt

1/2 cup dark chocolate chips 

Flaky sea salt for topping

Active time: 10 minutes

Total time: 20 minutes

Makes 16 cookies

Directions

Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper. In a large mixing bowl, whisk together the coconut sugar, vanilla extract, flaxseed, and almond milk until well combined. Next, add and whisk the melted and cooled coconut oil until completely smooth and creamy, about 1 minute.

Sift in the dry ingredients to the wet ingredients bowl and mix with a spoon until well combined. Fold in chocolate chunks. Use your hands as needed to form a ball of dough. Grab or scoop about 2 Tbsp of dough and roll it into a ball. Place 2 inches apart on the baking sheet. Bake for 10 minutes or until golden brown.

Sprinkle with flaky sea salt on top when done. (This is the finishing touch that puts the BEST into EVER.) Allow cookies to sit on the baking sheet for 5 minutes before removing them from the pan and place on a cooling rack.

Baker’s Tip

Always run a single test batch when making a new cookie recipe (or any other baked good recipe, for that matter). There’s nothing worse than making up an entire batch of cookies and watching them all come out flat or not spread at all. A test batch will allow you to make adjustments if needed.
